Want to know what it takes to make gumbo? Try this FREE recipe. "Like" us if you like the recipe or stop in and try us out. FREE Sampling as always. Ingredients in order of use in attached video: 1 1/4 Cup Butter 1 Cup Flour 1 Cup Chopped Celery 1 Cup Chopped Red Onion 1 Cup Chopped Green Bell Pepper 2 Cloves of Chopped Garlic 12-14 Oz of Cut Andouille Sausage 6 Beef Bouillon Cubes 2-4 Table Spoons of Hot Sauce ½ Tsp of Cajun Seasoning 4-5 Bay Leaves ½ Tsp of Thyme Leaves 14 oz of stewed tomatoes 1 Small can of tomato paste 4 Tsp of dried Sassafras Leaf powder 24 oz of Okra (Fresh or frozen) 1lb Cooked Crab Meat 1lb Uncooked, deveined Shrimp Salt to taste ¼ Cup of Chopped Scallions STEP 1 Using a 3 Quart Pan (20 minutes) 1 Cup Butter on medium heat till melted. While stirring, slowly add 1 cup of flour to melted butter, to maintain a smooth texture. Continue stirring the roux and watch closely or it will burn and you’d have to start over. Take it off the heat when done and continue stirring until it stops cooking. STEP 2 (5-10 min) Add each of the cups of celery, green pepper, and onion, with garlic to the roux mix. Add 12-14 oz of, cut andouille sausage, and stir on low heat watching to make sure you do not burn the mix. Remove from heat if necessary to work on next step. STEP 3 (35 Minutes) In a separate 6 Quart pot, add 3 Quarts of Water and add 6 beef bouillon cubes and bring to a boil, stir till cubes are dissolved. Add the roux mixture with sausage to the boiling broth and let simmer on medium heat. Next add the following: 2-4 Table Spoons of Hot Pepper Sauce ½ a teaspoon of Cajun seasoning blend 4-5 bay leaves ½ Teaspoon of dried thyme leaves 14oz of stewed tomatoes 1 small can of tomato paste Simmer on low for 35 Minutes STEP 4 (15 Minutes) 2 Teaspoons of Ground Sassafras Leaves Simmer for another 15 Minutes STEP 5 (15 Minutes) In an appropriate pan, sauté 24 ounces of okra in ¼ cup of butter (defrosted if frozen). Once okra starts to soften add an additional 2 Teaspoons of Ground Sassafras Leaves and stir. 15 minutes Combine Okra with simmering pot of Gumbo STEP 6 (45 Minutes) Next add 1lb of crab meat 1lb of 1lb of shrimp. Simmer for an additional 45 Minutes Add salt to taste Serve this hearty feast over rice or with bread and top with chopped scallions. Considerations: Gathering the Ingredients: 1-2 hrs Realistic prep and cook time- 3½ - 4½ hrs Total 1st Time Cost: $50-$65 based on market prices
